I tested watermelon.
Last weekend I wore my glucose monitor to a barbecue. This was supposed to be the safe one. It is 92% water and tastes like summer. Every diet I tried said fruit was fine. My doctor agreed. So I grabbed three slices, stuck on my CGM, and waited.

That is watermelon’s glycemic index. White bread scores 75. In other words, gram for gram of carbohydrate, watermelon and white bread hit your bloodstream at nearly the same speed.
I expected a gentle bump. Maybe 15... 20 points. I eat this fruit every summer. My kids live on it from June to September. This was the one food I never questioned.

Three cups of watermelon on an empty stomach raised my glucose 50 points. That is what most people eat at a barbecue. The recommended serving is one cup, about six small cubes.
Nobody stops at six cubes.
One cup has only 11 grams of carbs, so the glycemic load stays low. But at three cups... you are eating 33 grams of fast carbs with almost no fiber to slow them down. Watermelon has about one gram of fiber per cup. So your blood sugar rises fast, peaks fast, and crashes fast.
That crash is the nap.
My doctor never mentioned this.
I should say this: one cup of watermelon is not a problem. The glycemic load at that portion is low, and the fruit is packed with lycopene and vitamin C. Watermelon is good food.
This is about what happens when you eat the way people eat at a barbecue, which is three cups at a time with nothing else on the plate.
Here is what got me. Watermelon scores like bread, but nobody warns you because it is a fruit. It is mostly water, so the label looks clean. And the researchers who tested it used one-cup portions and called it safe. But nobody at a cookout eats one cup. They eat a plate and go back for more. And the glycemic load climbs with every trip.

I did not give up watermelon, and I never will. But I changed the plate. At that same barbecue, I grabbed a serving of the watermelon feta salad my friend brought. Same fruit, same amount. This time it came with crumbled feta, a handful of almonds, and fresh mint. The difference showed up on my arm in 30 minutes.

Fat and protein slow gastric emptying. In other words, they keep the watermelon in your stomach longer so the sugar trickles into your blood instead of flooding it. Cheese coats the sugar. Nuts add fiber and fat. That salty, crunchy bowl is not just a summer trend.
