3 “Diet” Snacks That Spike Like Candy

Rice cakes, pretzels, and fruit gummies walk into a glucose monitor. None of them walk out clean.

A plain rice cake has a glycemic index of 82. White bread scores 75. Table sugar scores 65. So this 35 calorie “diet food” may raise your blood sugar faster than the sugar bowl on your counter.

In other words, the thing you grabbed to be good is outperforming the thing you were told to avoid. A handful of almonds (about 23 nuts) scores a GI of 15. The fat, protein, and fiber do what the rice cake cannot. They slow the whole thing down.

Pretzels are flour, water, and salt. No fat. No fiber. About one gram of protein per serving. Your body breaks that starch into glucose in minutes. This is why you eat ten pretzels and want ten more. There is nothing in them to tell your brain the meal is over.
